Excellent service converges at Christine’s with imaginative New American dishes. A Creole crab cake ($15) is made unique with applewood smoked bacon, caramelized onion, and wilted escarole in a pool of tasso gravy. Silky, fatty, farm-raised Hawaiian kampachi is pan-seared, then sliced nearly transparent and arranged around a hot-sweet, pleasantly musty spinach and shiitake salad in a bisque-colored kimchee sauce. Seared Hudson Valley foie gras ($18) comes perched over a sour green apple slaw on brioche toast surrounded by a candied pool of purple berry gastrique; this goose got loose in the forest and force-fed itself huckleberries. Wahoo, snapper, and farm-sourced meats are cooked with joy and served in chic, understated surroundings to the sounds of a live jazz quartet in what may turn out to be one of the best restaurants in Broward. - Gail Shepherd
